Tastes like Christmas (Green salad with beets)

Just made this one up a few weeks ago and tried it again last night.

  • 6ish large beets with greens
  • 1 bunch mustard greens
  • 20 or so mint leaves
  • 1 handful currants or dried granberries
  • 1 handful toasted sliced almonds
  • 2 tbsps tamarind chutney (can buy in ethnic food section at most grocery stores)
    1. Boil beets until tender.
    2. Peel and slice beets. Leave at STP (room temperature).
    3. Coarsely chop beet greens and mustard greens.
    4. Steam greens. Be careful not to overcook.
    5. Coarsely chop mint.
    6. Toss ingredients with the remaining ingredients.

Mmm.  Sounds good.  I love beets, but never know what to do with beet greens.

doh!

that should read tamarind chutney, not turmeric!
