Cranberry Date Bars
I love these! I like to eat them frozen.
- 12 oz package of cranberries
- 8 oz package of dates, chopped and pitted
- 1 tsp vanilla
- 2 C flour
- 2 C oats
- 1 1/2 C brown sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 C butter, melted
Filling
- Cook cranberries and dates in sauce pan over low heat, covered, for 10-15 minutes or until cranberries pop. Stir often.
- Add vanilla
Layers
- In large bowl, stir flour, oats, sugar, soda and salt.
- Stir in butter until well blended
- Pat half of mixture in bottom of ungreased 13x9x2 pan
- Bake at 350 F for 8 minutes
- Spread filling over baked mixture
- Sprinkle remaining mixture on top
- Pat gently
- Bake 20-22 minutes or until golden brown
- Cool on wire rack
- Cut into bars

I’ve made these. the recipe came from the “Nantucket Holiday Table” cookbook I bought a couple of years ago. They are very yummy but impossible to remove from the pan after they’ve cooled. Scoop ‘em out and cut into squares while still warm - this is VERY important, otherwise you’ll be scraping yummy but petrified morsels out of your baking dish with a butter knife.

How would you modify this recipe to include pistachios with all of the other ingredients? I’ve tasted a cranberry-oatmeal-white chocolate-pistachio (cowpi) cookie and would like to make them.
